ART OF PRODUCTION:
After picking, ripe cherries are brought to the estate, where they pick out any defects. Fermentation begins in special tanks, with no oxygen-anaerobic. After fermentation, cherries are dried in semi shaded raised african beds for aproximately 21 days, depends on the weather. They are turned periodically to prevent mold formation. After drying process, cherries are depulped and we are left with naturally processed coffee beans full of sweet flavours. Last steps are checking for defects, grading beans by size and packing it in Grain-pro bags.
THE REGION:
Ratnagiri means ‘Pearl mountain’ in Hindu language. This name derives from old, silver looking oak trees that grow on the estate and also offer much needed shade for coffee plants. Owner of the estate, Ashok Patre, is a well traveled and curious man, who is in love with coffee production. He runs an organic and biodynamic estate with Rainforst alliance certificate. His estate is home to many different plant and animal species, which additionaly motivate owner to produce coffee in ecological and harmonical way.
