ART OF PRODUCTION:
After harvesting, ripe coffee cherries are dried in the sun for about 15 days. The cherries need to be turned all the time during drying. This prevents excessive fermentation or the appearance of mold in coffee. In case of a rainy period, the cherries are dried in mechanical coffee dryers. When the cherries reach the optimum moisture content, they are left in the cold and dry for another month to “sit”. After this process, they mechanically squeeze the coffee beans out of the dried cherries. Before packing the coffee, the beans are further sorted by size and prepared for the route it Sitio Carretao to our ends.
